Tonight I made soup. I don't know what to call it. Just vegetable soup I guess, but not normal vegetable soup. Even without a name though, it was absolutely delicious! Trevor thought so too! I don't have pictures this time, nor do I have specific directions, but I will tell you how I made it.
First of all, I cut up 2 small elk steaks into cubes and browned them along with 1/3 lb sausage. After it was browned I just set it aside, and in a large pot I started the soup. Just heat a little oil and add carrots, celery, onions, and fine chopped garlic. I used 3 medium-small carrots, then chopped amounts equal to that of celery and onion. I only used one clove of garlic. I let the vegetables soften and when the onions were just about softened, I added 4-5 cups of water, some salt and pepper, and about 2 tablespoons of beef soup base. I don't know how many bouillon cubes that would be. I also added some zucchini and yellow crook neck squash. Together they were almost the same amount as the other vegetables (separate). Just let that boil until the zucchini is about soft.
Once that is done, I added the meat into the pot along with a small green pepper (I mostly added the pepper then because I remembered I had it sitting in the fridge. It could be put in with the zucchini). I also added my seasoning which was just some chili powder (a few good shakes will do) and some Carolina Seasoning Mix (Holland Grill brand - also just a good few shakes or to taste). I added a bit more salt and pepper because it needed it. Then added some pre-cooked frozen corn from Mom's garden. All you have to do is let the corn heat up and let the seasonings blend in for about 5 minutes (or longer if you want the meat to absorb all the flavors) and you're good to go!
Hopefully that is enough instruction for you. Really all I did was get out some meat I wanted to use, and gather up the vegetables I had around that needed to be used. So make it however you like! Very delicious soup. I'm looking forward to having left overs. :)
